My Foolproof Biscuit Recipe



It's taken a lot of trial and error and a few messed up batches but I have finally nailed what I think is a pretty foolproof chocolate chip biscuit recipe. If cooked just right these biscuits turn out soft, chewy and delicious. Instead of just doing plain chocolate chip, I also like to use the basic biscuit dough and make variations. Today I made a classic chocolate chip batch, one with Snickers and another batch with white chocolate and macadamia nuts. They all taste so good but I definitely love the Snickers flavoured biscuits the most! I've taken a few pictures as a sort of visual walkthrough of the process and the detailed recipe will be posted at the bottom of the page.

So to start with, I cut up the butter into cubes and then softened it for about 20 seconds in the microwave. I then mixed the butter and sugar until they were blended. I then added the eggs and vanilla essence and continued to mix until all the ingredients were combined.




Next, I added all of the dry ingredients and then continued to beat the mixture until everything was fully combined. This is the basic dough completed! 



So the next part of the recipe allows for a bit of flexibility. You can choose to either use just plain chocolate chips or you could be a bit more creative with the different flavour combinations. In general, you will need about 1 1/2 cups of chocolate chips/nuts/dried fruit in to cover the whole mixture. For this batch, I simply split the dough into 3 parts and then used 1/2 cup of Snickers for part one, 1/2 cup of chocolate chips for the second part and 1/2 cup of a mixture of white chocolate and macadamia nuts for the third part. This was just an easy way to make sure I had the right proportions of dough to chocolate, but honestly, you can kind of wing the toppings depending on how much you prefer. 

For the white chocolate, I like to use the Whittaker's West Coast Buttermilk Caramelised chocolate from their Artisan collection for an even sweeter taste and for the chocolate chips, I always use either Nestle or Cadbury chocolate drops. 



Next, roll the dough into medium sized balls and then press down with your hand to flatten them slightly. Once you've rolled them all out just take your chocolate/nuts and press them into the biscuits. With the Snickers, I would recommend keeping the pieces closer to the centre of your biscuit as the chocolate tends to melt and spread off the edges. 







 Once you're finished topping your biscuits, put them in the oven at 165 degrees for around 10 -12 minutes, they should still be soft when you take them out. Let them cool on the hot tray for a few minutes before transferring them to a cooling rack.




Detailed Recipe: 

- 2 1/4 cups of flour
- 1/2 tsp salt - 1/2 tsp baking soda - 170 grams of butter - 1 cup of brown sugar - 1/2 cup of white sugar - 2 eggs - 2 tsp vanilla essence
- 1 1/2 cup of chocolate chips


Pre-heat oven to 165 degrees. Mix butter and sugar until they are blended. Add eggs and vanilla essence and combine. Add the dry ingredients and beat until just combined. Place toppings on the biscuits and then roll into balls and press them down lightly. Bake for 10-12 minutes.
